This is a very beautiful decorative and detailed mould and can be used as a side or border design on a cake.

To use this mould:
This is a very detailed mould with deep undercuts. Your paste needs to be a strong paste..a modelling paste. This can be made by adding 1 teaspoon of CMC or Gum Tragacanth to 250 grams of sugarpaste. Paste with CMC added can be used straight away. If using Gum Tragacanth, leave the paste to develop for a day before using.
Lightly grease the mould with a smear of Trex. You need to use so little you should not be able to see it on the mould. Make sure you grease the mould completely.
Roll out your paste fairly thinly but not so you can see through it. Lay the paste over the top of the mould and press into the cavity. You should be able to see the impression of the mould coming through the paste. Take a rolling pin and roll firmy over the paste from side to side and from top to bottom. This will cut through the paste at the edge of the mould. Tear away the excess paste, and tuck any stray edges in. Using a finger draw the paste away from the edge of the mould, and flex the mould all the way round the edges until you can see the paste releasing. Do this several times to be sure you can demould the moulded piece without it distorting.
Alternately you can place the mould in the freezer for several minutes to allow the paste to firm up before demoulding.
